Seven is a whole new collection of characters, and really has nothing to do with Zero through Six. And, Six is kind of its own thing, with a first person mode, and fully destructible store interiors.
Going back to Three, Four, and Five will be a little rough, as they are literally just the PS3 games with slightly updated graphics. Or, you can start at Kiwami One and Kiwami Two which are full remakes of the first two games using the same engine and fighting system that Zero uses. You can play Yakuza Zero or not as that is totally a stand alone game set in the 1980s and not really related to anything else in the franchise. If you start at the third one, you are going to be pretty lost. They really do have plot lines and characters that continue from game to game. It's not like a Star Wars situation where they started with the third game and went backwards. These games really need to be played in order.
